How do you recreate the whisky of the past?
Turn to the distilleries of the future.
Intrigued by the materials, techniques and methods featured in The Distillation of Whisky: Notes And Observations On Its Historical And Practical Aspects, 1927-1931, we approached six of the most innovative distilleries in Scotland today. To our delight, they accepted.
Each distiller focused on very different aspects for their spirits. From ale yeast to 'turkey quills', heritage malts to local barley, cloudy worts to Champonnois stills, and floor malting to a full fortnight of fermentation, the diversity of their proposals was far beyond what we could imagine.
When combined with each distillers' deep knowledge of the craft of whisky-making and the phenomenal character of their existing distillate, we anticipated that these experimental runs would result in six wonderfully divergent spirits.
But the spirits they produced truly surpassed our expectations.
